Bolognese Recipe

Soffritto of onions, carrots, and celery at 2:1:1 ratio (soften on a moderate heat). Add some mixed herbs.

Brown mince and then add a splash of milk (protects meat from acids to come).

Add half a glass of wine and then a few tomatoes. Allow to wine to reduce.

Mix the soffritto and the meat and allow to simmer on a low heat for 2 to 4 hours.

You may want to add more tomatoes (perhaps tinned) and, while simmering, some water or pasata can be added to maintain a nice consistency.

Salt to taste.
